Pastrami-Veggie Roll-Ups with Creamy Dijon Dip
These easy rolls look pretty, but they also pack a protein punch!
These pretty (and healthy) roll-ups make a sophisticated, satisfying appetizer for a cocktail party, but they are also great as a post-workout protein-and-veggie snack.
I've used pastrami in mine, but you could use any sliced meat (not to mention other vegetables) you like.
Ingredients
1/8 cup dijon mustard
1/8 cup Greek style yogurt
8 medium slices of pastrami
1 red bell pepper, de-seeded and sliced
2 scallions, halved lengthwise and cut into 3" pieces
1/2 cucumber, sliced into thin 3" pieces
Directions
Combine mustard and yogurt in a bowl. Stir well to combine and transfer to a small serving bowl. Refrigerate until ready to serve.
Lay a piece of pastrami on a clean cutting board. Top with a few slices of each of the vegetables, roll up and secure with a toothpick. Repeat with remaining pastrami and vegetables.
Serve the rolls immediately with the dipping sauce.
Makes 8 roll-ups and 1/4 cup sauce.

What phase can I eat this on? I thought snacks were only raw veggies and that we weren't supposed to eat deli meat? I love pastrami and really want to try this.
