Veggie-Loaded Asian Pork Meatballs
These high-fiber and high-protein meatballs are satisfying and delicious, especially with hot sauce!
These meatballs come together in minutes, are absolutely delicious and will keep you satiated for hours. I love them plain, with a little hoisin or Sriracha for dipping, or on top of some seared spinach. They also work well with different ground meats, vegetables and nuts so feel free to experiment.
Ingredients
1 lb ground pork
2 cloves garlic, chopped
4 scallions (green onions), chopped
1 handful fresh cilantro, chopped
1 carrot, shredded
1 cup finely-chopped kale
1/8 cup slivered almonds
1 egg, lightly beaten
2 tsp soy sauce
2 tsp toasted sesame oil
1/2 tsp ground black pepper
Preparation
Preheat oven to 375 degrees F.
Combine all ingredients in a mixing bowl and use hands to combine mixture. Form into about 18 2" balls and arrange on an ungreased baking sheet.
Bake meatballs for 10-12 minutes until cooked through. Serve hot with dipping sauce, if desired.
Serves 3-4.
