Wheat-Free Flax Bread
This very low-carb, high-fiber/protein and wheat-free, gluten-free bread is perfect for those who want to eat bread while sticking to their diet!
This easy and delicious bread contains no wheat or other gluten. It's light, yet nutty-tasting, like a denser whole wheat bread. It's perfect for sandwiches or just toasted with a little butter or jam.
It's made from high-protein/fiber flax seed meal, which can be found in the baking aisle of most well-stocked grocery stores. Make sure you buy the flax seed meal though, and not the whole seeds.
Ingredients
5 eggs (if you use jumbo-sized eggs, only use 4)
1/3 cup extra virgin olive oil
1/2 cup water
2 cups flax seed meal
1 tbsp baking powder
1 tsp salt
Directions
Preheat oven to 350 degrees F. Line a 9 1/2" x 11* or other large baking pan with parchment paper or a silicone baking mat.
In a mixing bowl, beat eggs, oil and water together until light and fluffy (1-2 minutes). Add the flax seed meal, baking powder and salt and stir just until well-combined. Let sit to thicken for 3 minutes.
Scrape batter into the center of the prepared pan and let it spread out (it likely won't reach the edges).
Bake for 18-20 minutes, until the top of the bread springs back when touched.
Let cool before cutting into squares (or whatever shape you want.
Serves 4-6.
