Ingredients
- 3/4 cup instant brown rice
- 1 can (15 oz.) black beans, rinsed and drained
- 3/4 oz. pickled jalapenos, chopped
- 2 oz. reduced fat shredded Mexican cheese
- 1/4 cup chopped cilantro
- 1/2 fat free or light sour cream

Preparations
- Cook rice according to package omitting any salt and fat.
- Remove from heat, stir in beans and jalapenos.
- Sprinkle evenly with cheese. Cover and cook about 5 minutes over medium low heat, or until cheese melts.
- Serve topped with cilantro and sour cream.

this is my fave meal! i chop up onions, carrots and garlic in mine and omit the cheese.
