  • Ingredients

    1. 3/4 cup instant brown rice
    2. 1 can (15 oz.) black beans, rinsed and drained
    3. 3/4 oz. pickled jalapenos, chopped
    4. 2 oz. reduced fat shredded Mexican cheese
    5. 1/4 cup chopped cilantro
    6. 1/2 fat free or light sour cream
  • Preparations

    1. Cook rice according to package omitting any salt and fat.
    2. Remove from heat, stir in beans and jalapenos.
    3. Sprinkle evenly with cheese. Cover and cook about 5 minutes over medium low heat, or until cheese melts.
    4. Serve topped with cilantro and sour cream.

    this is my fave meal! i chop up onions, carrots and garlic in mine and omit the cheese.
